Recipe of the Month: Moghrabieh / Moughrabiah/Pearl Couscous Traditional Recipe
Ingredient
Serving size : 2 persons
. Chicken :2 Breasts / or 4 legs
. SHP Moghrabiah Spices 20g
. 1 Onion ( Medium Size)
. Salt 20g
. SHP Chick Peas 200g
. SHP Moghrabiah 200g
. Butter 50g
. Water
. Sun Flower Oil 5cl
Cooking instructions:
A- Boiling the Beans & the moughrabiah pearls
� A.1- Boil the Chick Peas with water and salt: 50 min
� A.2- cooking moughrabiah (2 steps as shown below)
Step 1:
1.1. Boil 1 and half cup of water with salt. Turn off the heat.
1.2. Add the Moghrabiah pearls and let for 12 minutes with water.
1.3. Drain to get rid of excess starch.
Step 2:
2.1. Add the moughrabiah and pour one and a half cups of cold water or chicken stocks into the pot. It depends on the moughrabiah and your preference, you may want to add 1.75 cups of water/stocks
2.2. Place the pot over a moderate to high heat for ten minutes
2.3. Turn down the heat to the minimum possible when the moughrabiah comes to a rolling boil, and continue heating for five more minutes.
2.4. Take a little taste of the moughrabiah to be sure it is cooked (this should be no problem if you measured out the water correctly). If the moughrabiah is still a bit crunchy, put the lid back on to retain the steam, and get a little bit of hot water from the tap
2.5. Turn off the heat. (Serve as required)
B- Preparing the “Chicken Sauce” with the Relative Mix
B.1- Cut the Onion into small sliced piecesB.2- Fry the Chicken with the sun flower oil by adding the Sliced Onion, Spices, and Salt: 12 mi
B.2- Add:

B.2.1- 4 cups of water to the fried chicken
B.2.2- The Boiled Chick Peas to the mix above (B.2.1)
And let the mix boil all together for about 25 min
C- Preparing the Moghrabiah
C.1-Wash the boiled Moghrabiah (as if you were washing PASTA)
C.2 Add:
C.2.1- the 50g of Butter to the Boiled Moghrabiah
C.2.2- One Cup of “Chicken sauce”(without chicken and chick peas), tokens from the boiled mix (B.2.2)
Ú And let them boil (on a very low heat degree) until the chicken sauce DRY
III- Serving:
You could serve half the plate Chicken Sauce with the relative mix (B), and the other half Moghrabiah (C).
