Recipe of the Month: Moujadara ( Lebanese Lentils & Rice with Onions) Vegetarian Recipe
Ingredient
Yield: 4 serving
- 2 medium to large onions
- 1 cup of uncooked red lentils
- 1/2 cup of long grain rice
- 4 cups of water
- Salt to taste
- 1/2 teaspoon of seven spices
- 3 tablespoon of corn oil / or sunflower oil
1- Peel and slice the onions. Fry and stir them slowly in oil until they are golden brown. Remove from heat, and set aside.
2- Place lentils in a medium saucepan with water to cover and add salt. Bring to a boil, reduce heat, and simmer about 20 minutes.
3- Add the rice into the saucepan with the lentils and cover with enough water. Season with seven spices. Cover saucepan, and continue to simmer 15 to 20 minutes, until rice and lentils are tender.
4- Mix half the onions into the lentils mixture. Top with remaining onion to serve.
You can serve this delicious dish with yoghurt.
