Recipe of the Month: Bourghol Bi Banadoura (Bourghol with Tomatoes) Vegetarian Recipe
Ingredient
Yield: 4 serving
� 2 cups of brown fine bourghol
� 2 medium onions
� 2 tomatoes, sliced cubed
� 2 pcs of garlic sliced
� 1 tsp of red chilli paste
� Salt to taste
� � tsp of allspice powder
� 2 tbsp of sunflower oil
� 3 cups of water
� � cup of lemon juice
Preparation Procedures:
1- Place Bourghol in a bowl, cover with cold water and let it stand for 20 minutes. Drain Bourghol, and then press to remove excess water as much as possible.
2- Peel and slice the onions and the garlic. Fry and stir them slowly in sunflower oil until they are lightly golden brown.
3- Cut the tomatoes into small sliced cubed. Add the sliced tomatoes, salt and allspice to the onions and the garlic.
4- Combine the drained Bourghol to the onions garlic and tomatoes and the 4 cups of water.
5- Toss together lightly. Add the red chilli paste to the whole mixture.
6- Let the mix boil on the low heat for 30 minutes, at a point that the water do not cover the surface.
7- Serve hot with the lemon juice on top (to taste). Aside appetizer you can mix yoghurt, sliced cucumber, salt and dry mint; or fresh salads.
