Recipe of the Month: Moulokhiah/Moulokhieh/Molokieh/Molokhiah with Chicken
Ingredient
Yield: 6 serving
Part 1-
- 4-6 boneless chicken breasts or/and leg
- 1 onion peeled and cut into 4 pieces
- 4 bay leaves
- 2 cinnamon sticks
- 2 lemons cut into 4 pieces
- 1 tsp salt
- 6 cups of water
Part 2-
- 15 garlic cloves peeled and minced into tiny pieces
- � bunch of fresh coriander sliced or 3 tbs of coriander powder
- 500g of dry molokhiah / or 2 packages of frozen molokhiah
- 5 big lemons squeezed into juice
- 1 cup of white long rice
- 1 � cup of water
- 4 big onions (sliced and minced)
- 2 cups of vinegar
- 2 tbs of sunflower oil
- 4 Pita or Lebanese bread cut into square pieces and roasted
Directions:
I- Chicken:
1- Place the chicken and all the ingredients of part 1(bay leaves, cinnamon, salt, 2 lemon cut and the 6 cups of water) in a large and deep pan. Let them all boil for at least half an hour or until the chicken is well cooked
2- In the meanwhile pass through a sieve to remove all the extra white boiling foam on the top of the pan
3- Once the chicken is finely cooked, remove the lemon, bay leaves, cinnamon stick, to keep only the water and the chicken.
4- Remove the chicken , and cut it into square pieces, than throw it into the pan again
5- In a pan aside, fry the coriander fresh coriander and the peeled and sliced garlic with sunflower oil, until the garlic becomes soft and lightly golden. In case of coriander powder don�t mix it with the fried garlic
6- Than, add the soft garlic and coriander to the water and chicken. Stir very well and let them boil for around 3-4 minutes
7- Add the frozen / dry molokhiah. Stir all the ingredients together than add the lemon juice and let them boil for few minutes
II- Rice:
1- Wash one cup of rice in water 2-3 times to get out the starch. Drain them very well
2- In a pan aside put 2 tbs of sunflower oil than add the drained rice and 1 � cup of water
3- Put it over the fire to boil on medium heat, and when the water is almost dried, you put the fire off.
III- Onion and Vinegar Sauce:
1- Slice the 4 big onions and mince them finely
2- Place them in a bowl
3- Add the 2 cups of vinegar to them.
P.S: For those who find the vinegar strong, replace with lemon juice
IV- Pita
1- Open the Pita or the Lebanese bread
2- Put them in a warm oven (250 degrees)
3- Let them until them become golden brown then crash them
V- How to serve Molokhiah/Molokhieh/Moulokhiah/Moulokhieh?
1- Put 2-3 tbs of rice
2- Put some bread over
3- Cover with molokhieh and chicken
4- On the top add some Onion and vinegar sauce. For those who find the vinegar strong, replace with lemon juice
