Recipe of the Month: Vegetarian Recipe    
Ingredient
� 1 cup of (SHP) Couscous
� 1 cup of water
� 1tsp of butter (optional)
� � tsp of salt (optional)
� 1 tsp of(SHP) oregano
� 3 medium sized tomatoes (cut into cubes)
� 2 wild cucumber sliced
� 3 leaves of lettuce (sliced)
� 1 medium sliced onion (into small pieces)
� 10 leaves of fresh mint (sliced)
� 50g of (SHP) sliced black olives
� � cup of (SHP) extra virgin olive oil
� � cup of lemon juice

Preparation procedures:

1- Boil 1 cup of water in a saucepan.
2- Add � teaspoon of salt (optional)
3- Add the same quantity of Couscous and a spoon of oil in the hot water and stir.
4- Cover and let it sit for 5-8 minutes.
5- Add 1 tsp of butter (optional) and fluff Couscous gently with a fork.
6- In the meanwhile, mix the sliced tomatoes, onions, lettuce, mint, black olives and the oregano.
7- When serving in a quietly deep bowl, put the Couscous in the middle/center and the vegetables mix all around.
8- Add the olive oil and the lemon juice on top of all
