Recipe of the Month: Tabouli, Tabouleh, Taboulé (Tabouli is a delicious Traditional Lebanese side salad or appetizer recipe)
Ingredient
Yield: 4-5 persons
1- 3 bunches of finely chopped flat parsley
2- � bunch of finely chopped fresh mint
3- 1 big onion sliced (or 5 finely chopped green spring onions with the green parts)
4- 5 tomatoes cut into small dices
5- � tsp of (SHP�s) Tabouli spices
6- 3 medium size Lemon juice
7- 1 tsp of salt powder
8- 5 tbs of (SHP�s) Extra Virgin Olive Oil
9- 1 tbs of (SHP�s) Brown fine bourghol
10- � Green Paprika cut into small cubes (Optional)
1- Rinse Brown fine Bourghol several times and put it in a sieve to drain.
2- Chop the Tomatoes into small dices
3- Clean the flat fresh parsley and fresh mint leaves and remove the large stems, because we want only the leaves and chop finely. Rinse them very well and put them in sieve to drain.
4- Chop the onions finely and mix them with Tabouli spices. Put them in a large bowl.
5- Add the Bourghol, Tomatoes, Parsley, Mint, Green Paprika diced (optional), salt, lemon juice and olive oil to the bowl.
6- Toss well. Taste for seasoning. If too dry, you can add additional lemon juice and salt.
7- You can also cover the bowl very well and put it in the refrigerator to rest for about 1 hour before serving and even before adding the olive oil and lemon juice, and then you can toss and serve.
8- Serve with lettuce leaves or fresh green grape leaves by scooping some of Tabouli mix into a leaf and enjoy.
