Recipe of the Month: FATTOUCH (Lebanese Salad)    
Ingredient
Yield: 8 servings
� 2 large pita breads
� 75ml extra virgin olive oil
� 50ml lemon juice
� 2 garlic gloves minced
� 1 tbsp of SHP�s SUMAC (ground dried herb, available in arab stores)
� 1 bunch of fresh thyme leaves
� � bunch of fresh mint leaves, chopped
� 1 bunch of fresh parsley, chopped
� 1 bunch of romaine lettuce, sliced
� 1 bunch of purslane leaves
� 3 green onions, sliced
� 6 green cucumber, sliced
� 5 big tomatoes cut into large cubes
� 1 green sweet paprika, diced
� 1tsp of salt powder (optional)
� � tsp of SHP�s black pepper powder

1- In a large bowl, toss together chopped assorted herb�s (Thyme leaves, mint, parsley, purslane leaves, and lettuce), tomatoes, cucumber, green onion, and green paprika.
2- Toast pita bread in 375 degree oven until golden brown or grill until crisp. Cool and break into bite sized chuncks.
3- Whisk the bread chuncks, olive oil, lemon juice and garlic to the other mix.
4- Sprinkle the sumac over the salad
5- Season with salt and pepper to taste.
6- Toss well and serve freshly.
