Recipe of the Month: Chicory in oil (Hindbe b’Zeit)
Ingredient
Yield: 6 serving
. 1000g of green (fresh) Chicory
. 700g of water
. 100g of olive oil
. 240g of onion, chopped
. 1.5g of salt
. 120g of lemon juice

Preparation Mode:
1- Wash well the fresh green Chicory and cut into small pieces
2- Put in a deep cooking pot and let them cook until the leaves become tender
3- Drain
4- In a separate cooking pan, fry the chopped onion until golden brown
5- Put Onion aside to cover on top
6- Put the Chicory to the frying pan, keep frying for 5 minutes and stir continuously. Salt to taste.
7- Serve hot by putting the Chicory in a flat dish and cover on top with frying onions.
8- When serving you can add some fresh squeezed lemon on top
